Directions:

dredge both sides of both fillets through milk then flour

In cast iron skillet melt 1 Tbsp of butter, add 1 fillet of fish, cook 2 minutes on each side, transfer to plate and repeat process for 2nd fillet

Wash or wipe out skillet; add 1/3 stick of butter, lemon juice, and parsley or capers

Pour butter lemon sauce over fish

Great for brunch or dinner; makes 2 servings

Ingredients:

2 egg

2 tbsp milk

1/3 cup crumbled feta cheese -or-shredded gruyere -or- shredded brie

2 tbsp chopped chives, divided

2 tbsp chopped basil, divided

1 tbsp chopped parsley, divided

1 tbsp chopped thyme, divided

1 tsp pepper, divided

1 tbsp shredded gruyere or feta cheese crumbled
